Blender tapioca cake recipe

Tapioca cake, also called tapioca couscous, is one of the most delicious and typical desserts in Bahia. There is the baked tapioca cake version and also the cake that doesn't go in the oven, it's the same one that we teach you to prepare here!

Made with granulated tapioca, condensed milk, coconut milk and grated coconut, this is a frozen dessert that will certainly please everyone at home! Ingredients for making tapioca cake in a blender:

 1 liter of regular milk

 1 glass of coconut milk (200 ml)

 1 can of condensed milk

 500 grams of granulated tapioca

 1 cup of grated coconut (100 g)

How to make tapioca cake from a blender:

Beat the milks in a liquefied (ordinary milk, coconut milk and condensed milk) and transfer to a large saucepan. Place over medium-low heat until it almost boils - keep an eye out for it to boil over!

Tip: If you don't like to feel the coconut pieces, you can blend this ingredient together with the milks in a blender.

Turn off the heat and add the tapioca and grated coconut. Mix and set aside for 30 minutes off heat. During this time the tapioca and coconut will hydrate the liquids, making the mixture more consistent. No need to go back to cooking.

Tip: To enhance the flavors, add 1 pinch of salt to this mixture.

Grease cake pan or pudding pan with a little oil or butter and add the mixture to this simple tapioca cake. Cover with plastic wrap and set aside in refrigerator for 2 hours or until set well.

Tip: Another option, faster, is to reserve in the freezer for 1 hour.
